"Sake is born from the rice fields" -- Akita's Amanoto's Junmai philosophy

Commitment to Junmai Sake Since 2011, our entire brewery has adopted the stance of brewing only "junmai sake" (= junmai brewery). By brewing sake using only rice and water, without added alcohol, we are able to directly express the characteristics of the land (rice and water). Sake Rice and Climate of the Local Yokote Basin Our motto is "sake is born from the rice paddies," and we use rice grown locally (near the Yokote Basin) by specially cultivated or contracted farmers whenever possible. As a sake brewing region, we are blessed with abundant spring water and underground water (such as the Biwanuma Cold Spring), and are known for their soft water. This contributes to the smoothness, gentleness, and pleasant drinking experience of our sake. Balance of Old Traditions and New Challenges Founded in 1917 (Taisho 6), our brewery has a long history and is deeply rooted in the local community.  We preserve time-consuming and laborious processes, such as using traditional methods (such as the "funeshibori" method) to press the sake. This adds depth and complexity to our sake.  Breadth and Balance of Flavor Many of our sakes fully capture the umami of the rice while maintaining a good balance of aroma, crispness, and aftertaste. For example, "Amanoto Miine" is rated as being relatively mellow and flavorful, yet easy to drink.  We also offer seasonal and limited-edition sakes (namazake, hiyaoroshi, etc.), so there are varieties that can be enjoyed depending on the season or your mood.  Good Value for Money Many of our sakes are relatively affordable considering their high taste and quality, and many people say, "This quality is worth it." Their signature sake, "Miine," is a prime example.   Sake brewing that showcases the "local flavor and the face of the brewery" Tours of our brewery are available (reservations required).
