Also, the lobster head is full of roe, super flavorful! The abalone is perfectly pan-fried, and the meat is very tender and chewy. The foie gras is a big piece, and eating it with toast gives a rich texture! Finally, the chef even made lobster soup from the lobster head, which was very fresh and sweet!
