[Shimane, Matsue] Handmade soba noodles every morning

If you come to Matsue, you should try the soba here! A local izakaya recommended "Handmade Soba Tofu." It's written as "Tofu" but pronounced "Kochi." I went there the next day at lunchtime. I had heard that there was a line even on weekdays, so I arrived 15 minutes before opening. Luckily, I was the first one there! When I turned around after about 5 minutes, there were about 10 people in line. This place serves carefully made soba noodles that are handmade every morning, and you can choose between 100% soba and 28% soba. The difference between 100% soba and 28% soba is the percentage of buckwheat flour. 100% soba is 100% buckwheat flour. 28% soba is made with 80% buckwheat flour and 20% wheat flour. I ordered the 100% grated daikon radish soba (1,050 yen). I also had some soba tofu (380 yen) and some local sake. The 100% buckwheat soba noodles, made with aromatic coarsely ground buckwheat flour, had a chewy texture and a great flavor, and were very delicious. There is also a parking lot.
