"Lai Chi Kok Japanese Cuisine" Local Dishes and B-Class Gourmet Culture

- Ummai 🧸 Ummai regularly introduces different special dishes, always full of surprises. This season's theme promotes affordable food culture - local dishes and B-class gourmet. Local dishes use local ingredients combined with regional customs and traditional preparation methods; B-class gourmet started in 1985, defined as "low-cost food made with ordinary ingredients." The "B" represents "regional brand (BRAND)." You can experience the stories and culture behind the dishes. This time, three of us tried 13 new dishes. The following were particularly memorable: 🥔 Hokkaido Baked 2-Year Winter-Aged Potatoes ($78) Highly recommended!! The potatoes aged in severe cold for two years are truly delicious. Using Hokkaido’s snowy, low-temperature environment, the starch in the potatoes converts into sugar, making them 17 times sweeter than usual. Paired with butter, the aroma is richer and sweeter! 🍣 Niigata Sea Bream Bamboo Leaf Sushi ($48) "Bamboo leaf sushi" is a traditional specialty from the Hokuriku Shinetsu region of Japan. Made mainly with sea bream meat and vinegared rice, wrapped in sasa bamboo leaves. The sea bream is usually salted and fermented, and the preservative properties of the bamboo leaves help keep it fresh and enhance the flavor. 🍝 Niigata Itoigawa Squid Ink Fried Noodles ($88) Originating from Itoigawa City - made with freshly caught local squid. Notable for its rich ink sauce and chunks of squid, adding texture layers, while also delivering Itoigawa’s unique flavor. It somewhat resembles Japanese soy sauce fried noodles. 🍤 Hiroshima Beef Intestine Tempura ($88) From Fukushima Town, Hiroshima Prefecture - early on, many butcher shops and slaughterhouses surrounded Fukushima Town. This tempura dish was created to make full use of leftover offal. The tempura not only preserves the freshness of the offal but is fried to a crispy exterior and tender interior. 🐟 Tokyo Salmon Roe Monaka / Tuna Paste Monaka / Sea Urchin Monaka ($58/$58/Market Price) Originating from the Edo period - unique for its homemade wafer shells and diverse fillings, both savory and sweet. I especially liked the generous tuna paste and sea urchin fillings. Cute and delicious. 🐟 Nagoya Local Dish Three-Style Eel Rice ($108) Originating from Nagoya - grilled eel is spread over rice and divided into four portions: 1️⃣ Eat directly: enjoy the original eel flavor 2️⃣ Add seaweed or wasabi for extra flavor 3️⃣ Pour broth over it to make chazuke (tea rice) 4️⃣ Enjoy however you like The eel is grilled to a fragrant char, and the chazuke style is comforting with tasty broth. 🍤 Kyoto Pike Conger and Eggplant Tempura with Plum Meat and Grated Daikon ($118) Pike conger is considered a premium fish and a summer delicacy in Kyoto. Tempura here is always a safe choice, fried to crispy skin and tender meat. Paired with soft eggplant and refreshing plum meat with grated daikon, it’s fresh and delicious. 🐷 Fukuoka Robatayaki Grilled Pig Trotters ($88) Fukuoka’s style differs from Okinawa’s stewed pig trotters; it uses binchotan charcoal grilling, making the trotters crispy outside and soft inside. Just a gentle bite reveals rich flavor. 🧊 Frozen Pineapple Sour / Frozen Lemon Tart Sour ($88/glass) The pineapple sour is sweet, refreshing, and fresh; the lemon tart sour is perfect for photos, with lemon slices stacked and frozen into a lemon tart. 🔊 Note: The first customer each day at Ummai who orders the "Frozen Lemon Tart Sour" can upgrade to a special 35cm extended version! Other dishes on the day: 🥢 Fukuoka Mentaiko Cheese Pork Tempura: spicy and tasty 🥢 Oita Ryukyu Marinated Sashimi: sashimi mixed with sauce made from sweet soy sauce, mirin, sake, and sesame 🥢 Chiba Peanut Miso Fried Chicken: surprisingly good combo of peanut miso and fried chicken 🥢 Iwate Morioka Cold Noodles: unique beef bone broth with a refreshing flavor 🥢 Hokkaido Fisherman’s Seafood and Vegetable Jingisukan: salmon and seasonal vegetables grilled on a hot plate, then steamed and seasoned with miso, showcasing the flavor of Hokkaido fishing villages - 📍 Ummai (Lai Chi Kok) Shop G02, G/F, D2 Place ONE, 9 Cheung Yee Street, Lai Chi Kok - #lamchelin #LaiChiKokFood #LocalDishes #HongKongIzakaya #foodphotography
