Kotohiraso in Tsuruoka, Yamagata Prefecture, is a super popular restaurant that attracts ramen lovers from all over the country. Located on the coast, access by car is essential. On the day of our visit, we received a numbered ticket and then headed to the waiting room. We waited for a whopping two hours while relaxing in the Japanese-style room called the waiting room! We overcame the seemingly endless wait with enthusiasm for Kotohiraso's Chinese noodles. The Chinese noodles served to us had a distinctive light soup. With a fragrant seafood flavor, it was a bowl that truly made us feel the "taste of the sea." The balance of the soft, curly noodles and the soup was exquisite, and it was so delicious that we thought it was worth the wait!
