Local Fusion Private Dining at One Farrer 🍏

Located at Level 20 of One Farrer Hotel, Nest offers a unique private dining experience in rooms repurposed from the hotel’s villas and suites. I really liked the comfort and privacy of dining in my own personal space! As converted hotel rooms, they also come with your own private attached bathroom with a bathtub (no soaking though!) 🛀 As part of the Chef’s Signature Series, I tried their special 5 Course Local-Fusion Experience Menu that cost $138++ per pax. This special menu only runs from 1 July to 3 September 2022 🧑🏻‍🍳 As a huge fan of local fusion, every course was enjoyable and I appreciated the thought that went into crafting each dish, as the renditions were well executed to be familiar and elevated. [“Hae Mee”] is Nest’s recreation of prawn noodles, with capellini, fresh carabineros prawn and tobiko in a flavourful prawn stock 🦐 [“Bakwan Kepiting” Consommé] sees a homely pork cube patty topped with jumbo lump crab meat and black caviar, swimming in a light and comforting chicken soup 🍲 [Kurobuta “Bak Kut Teh”] comes with thick cuts of melty tender pork belly in a herbal sauce that packs quite a flavour punch! It is served on a bed of cuttlefish with broccolini and a crisp charcoal brioche that acts as the “you tiao” that usually is eaten with bak kut teh 🤩 [“Laksa” Madai] is a generous slab of sea bream that comes with crispy edible scales (so crispy!), laksa foam and laksa oil 🐟 It is served with pancetta, beancurd puffs and beansprouts underneath for the full laksa experience 🍜 [TWG Singapore Breakfast Tea Slice w Vanilla Gelato] is plated to resemble the quintessential sg breakfast of kaya toast and eggs!
