We began with the fried mandu—crisp, golden, and bursting with flavor🥟. They weren’t just a satisfying appetizer but a litmus test of the kitchen’s precision—and Hongmyeong passed with flying colors. Next came the meatballs in oyster sauce🧆🦪, which surprised us with their tenderness and rich umami depth. Juicy and deeply savory, they were easily the second-best dish of the meal😋. The yuringi (crispy chicken in tangy sauce) and the chilled seafood salad were competent and well-executed, though they played more to expectation than innovation. But the jajangmyeon—oh, the jajangmyeon—was where Hongmyeong truly set itself apart. The black bean sauce, made with fried lard instead of the usual oil, was decadently aromatic and studded with sweet, slow-cooked onions🧅. But the real masterstroke?
