A popular soba noodle shop in Kitayama District, Kyoto, Japan: Kitayamaro

#よしむら北山楼, a soba specialty store near Kitayama subway station, is a popular local restaurant, and almost all of the diners are local residents. Compared to common delicacies like ramen and udon, soba seems to be of a higher grade because they all have their own parking lots? It only opened at 11 o'clock not long ago, but there were 10 groups of customers for lunch on a weekday. Business is really good. Beishan Building is quite large, with an antique Japanese style interior, the kind used for traditional eel rice. There is a large glass window in the noodle making area where you can watch the chef making noodles, and there is also a Japanese garden. The overall dining environment is spacious and comfortable. Business lunch is provided on weekdays, but I wanted to eat fried shrimp, so I ordered Tendon Soba, which has two kinds of soba noodles, a small plate of cold noodles and a small bowl of hot soup noodles. Both taste good, after all, they are hand-pulled noodles. You can taste the texture of buckwheat flour in the soba noodles. Dip the cold noodles into the small bowl of sauce and slurp it into your mouth! Don't drink all the dipping sauce for soba noodles. Leave at least 1/3 of it, because after you finish eating, the store will bring a pot of noodle cooking water for you to pour into the bowl and combine it with the sauce to form a bowl of soup. The tempura came with two fried shrimps and fried shiso leaves, but to my surprise, there was also a lot of rice underneath!
