A century-old intangible cultural heritage food - Rouyan (meat wonton).

🥢Fuzhou's "Tongli Rouyan" was founded in the second year of the Guangxu reign of the Qing Dynasty (1876). It has been passed down for six generations over 148 years and is a famous old shop in Fuzhou for making Rouyan skin and cooking "Taiping Yan" (a traditional Fuzhou dish). In 2024, after the Beijing Kerry Hotel's restaurant has hosted a series of delicacies such as Black Pearl, century-old shops, and Beijing offices, we welcome the final chapter - a century-old intangible cultural heritage delicacy, Tongli Rouyan. A bowl of Rouyan has finally arrived in Beijing, bringing the taste of Fuzhou. We bring the good fortune of Fuzhou to every guest at Kerry. 🥣Fujian's Rouyan is nicknamed "meat wrapped in meat." As the name suggests, the translucent "skin" of Rouyan is made from pork leg meat and sweet potato flour, beaten until "as thin as paper." "No feast is complete without Rouyan, and no year is complete without Rouyan." Tongli Rouyan symbolizes peace and conveys good fortune. Its round head and scattered tail resemble a flying swallow, appearing like jade and emerald, and tasting smooth and crisp. 🫖The same meat skin, when chopped, becomes Yan Si (meat threads), which are light, thin, and sticky, and are best paired with white pepper, hot soup, and fragrant vinegar. A thin, translucent meat skin, wrapped in fresh, smooth hot soup, releases a rich meat aroma with each bite, providing a comforting and satisfying experience. 🥄Handmade fish balls are large, with a strong umami flavor and rich fat. The taste is solid and chewy, with the fresh aroma of fish and pork spreading in the mouth, and each bite is filled with rich and mellow soup.
