When talking about Kagawa cuisine, the first thing that comes to mind is "Sanuki Udon". In fact, in addition to Udon, another most authentic food in Kagawa is "Honatsudori (chicken)".
When traveling to Shikoku, you can see signs of "Hotsuke Torii" everywhere. This time, because we stayed at a hotel right across from Marugame Station, there happened to be a "Ichizuru Hotsuke Torii" Marugame main store nearby. The exterior decoration is low-key marble, and the interior decoration is wooden tables. The staff speaks fluent English, and there are English and Japanese menus as well as teaching methods on how to eat Hotsuke Torii (chicken), which is very considerate.
After ordering, the waiter will bring you ice-cold and refreshing boiled water. Because it is cooked to order, you need to wait patiently for the bone-in chicken to arrive. First of all, the appearance of the bone-in chicken may make people mistake it for turkey, but it is a standard chicken, like an L-shaped leg, served on an aluminum plate. Because it is very hot, it is recommended to eat white rice first, and wait until it is no longer hot, then take a bite, it is really amazing!
The chicken is roasted to a crispy, oily and tender texture, and paired with the special pepper sauce for bone-in chicken, it goes really well with rice! The meal comes with raw cabbage leaves to relieve the greasy and salty feeling of eating chicken.
There are two grades of chicken thigh meat at Ichiraku-bone-tsuke, one is young chicken (ひな), the other is old chicken (おや). As the name suggests, young chicken meat is softer and tenderer, while old chicken meat is chewier because it is more active and older, and tastes like Taiwan's "free-range chicken". The taste is really different. I suggest you order both to try them so you can know the difference!
