His "great achievements" are by no means luck. He was born into a culinary family. In 1988, when he was 7 years old, his father's L'Ambroisie restaurant, located opposite Hugo's former residence, won three Michelin stars. It has the longest record of holding three stars in Paris so far, and it is also the only restaurant among the ten three-star restaurants that adheres to traditional French cuisine.
He began to learn from different famous chefs in many restaurants at the age of 15, and returned to his father at the age of 22 to continue the family's three-star myth. It was not until 2014 that he decided to "go solo" - to open a restaurant with his own generation's style. Hexagone is his new interpretation of traditional French cuisine in the language of young people.
