The restaurant just returned from the summer vacation and I was thinking about the Burgundy red wine stew that I wanted to eat (the store had to spend a day preparing this dish). I chose a 16-euro set menu: the front: fruit crisp bacon and cheese foam, the main course: low temperature slow cooking pig ridge with roasted vegetables. What is remarkable is this pork spine, the reason for low temperature cooking, the meat is cut open, and it is also with tender pink, like the dew in the morning, with roses waiting to be put. At the end, we still have a favorite, caramel cloth Crème brlé, relive the joy of breaking the caramel shell with a spoon. We sat in the yard for a long time and chatted. A pleasant lunch.
