The production area of Zhongjiang noodles is concentrated in 11 towns and more than 300 families in the upper reaches of Kaijiang River. The noodles are made with underground water below 30 meters. This kind of water source is strictly protected, and the water quality is clean with low impurity content. It plays a fundamental role in the production process of Zhongjiang noodles. This is also the main reason why Zhongjiang noodle restaurants lose the flavor of Zhongjiang noodles when they open in other places.
