Winter is the perfect season to savor rich and flavorful dishes! Recently, I had the pleasure of enjoying a limited-time authentic Shanghainese meal with friends, and it was not only authentic but also incredibly delightful. We visited the familiar Hyatt Regency Tsim Sha Tsui's The Chinese Restaurant to taste the Shanghai flavors brought by Chef Liu Zhifang, the Executive Sous Chef from Hyatt Centric Shanghai Zhongshan Park. The chilled and refreshing sauce was packed with a spicy and aromatic flavor, and the chewy razor clams were incredibly addictive. Jellyfish Head from Zhoushan! Made with fresh jellyfish heads from Zhoushan, the dish was delightfully crunchy, paired with tangy and appetizing Italian balsamic jelly, making it a perfect starter. Salted Pork and Bamboo Shoot Soup ($198/person)! The creamy and rich soup was incredibly sweet and flavorful, featuring my favorite bamboo shoots and tofu knots that absorbed all the deliciousness. The savory and umami taste of the soup was simply irresistible. Braised King Prawns ($168/person)! The impressive presentation of the large prawns was eye-catching. The sweet and savory braised sauce was perfectly balanced, and the tender, bouncy prawns coated in the flavorful sauce were absolutely divine. Grandma's Braised Pork Belly ($328)! The pork belly, with its perfect balance of fat and lean meat, was braised to perfection. The fat melted in the mouth while the lean meat was tender and flavorful. It was so delicious that it was hard to resist pairing it with rice. Crispy Spring Rolls ($88/3 pieces)! The filling included shredded pork, bamboo shoots, and cabbage, making it very hearty. Each bite was crispy yet not greasy, with a rich and satisfying flavor. Pan-Fried Dumplings ($98/3 pieces)! Shaped like crescent moons, the dumplings had a golden crispy bottom. The dough was soft yet crispy, and the filling was aromatic and delicious. Mango Sago Pomelo Dessert ($58)! I loved the version here, as it wasn't overly creamy and had a strong fruity aroma. It was filled with plenty of mango and pomelo pulp, and the sweetness was just right, making it very enjoyable. The à la carte menu by the guest chef from Hyatt Centric Shanghai Zhongshan Park is available from now until December 31.
