Later, I found out the new shop’s English name is Eva Tonkatsu, using the Japanese-English word for "pork cutlet" as the name, but the style is still Korean: they fry a whole pork loin without extra fat, relying solely on the meat itself to shine—simply perfect. The side dish cold noodles are truly a surprise: although the sauce base still uses Japanese cold noodle sauce, the key is that the noodles are really cold!
