What makes this place truly special is its on-site garden, where they grow many of the herbs and vegetables used in their dishes. Their menu features seasonal, farm-fresh ingredients, and they work with local farmers to minimize their environmental impact. The Sweet Potato Scramble was a highlight, packed with flavor and sustainably sourced goodness. The arboretum uses solar energy, rainwater collection, and pollinator-friendly landscaping to reduce its ecological footprint. We loved exploring the EcoLab, where we learned about native plant restoration and how climate change is affecting Appalachian forests. Walking through the Pollinator Garden, filled with bees, butterflies, and native wildflowers, reminded us of the importance of protecting biodiversity.
