We explored the Blue Ridge Parkway, often called “America’s Favorite Drive,” and were amazed by its breathtaking landscapes and conservation efforts. This 469-mile protected corridor helps preserve the Appalachian ecosystem and provides a habitat for diverse wildlife. Instead of driving the entire way, we opted for a more eco-friendly approach—biking and hiking along sections of the parkway to reduce our carbon footprint. One of the highlights was stopping at Craggy Gardens, where we hiked to a stunning viewpoint filled with blooming wildflowers. I would recommend visiting in the morning for the best light and a peaceful connection with nature.

Sunny Point Café – A Farm-to-Table Breakfast Spot 🥑🥞
We had an incredible farm-to-table breakfast at Sunny Point Café, a restaurant that embodies Asheville’s commitment to local, organic food. What makes this place truly special is its on-site garden, where they grow many of the herbs and vegetables used in their dishes. Their menu features seasonal, farm-fresh ingredients, and they work with local farmers to minimize their environmental impact. The Sweet Potato Scramble was a highlight, packed with flavor and sustainably sourced goodness. I would recommend arriving early, as this spot is a local favorite and fills up quickly!

We spent an afternoon at The North Carolina Arboretum, a 434-acre public garden dedicated to environmental education and conservation. The arboretum uses solar energy, rainwater collection, and pollinator-friendly landscaping to reduce its ecological footprint. We loved exploring the EcoLab, where we learned about native plant restoration and how climate change is affecting Appalachian forests. Walking through the Pollinator Garden, filled with bees, butterflies, and native wildflowers, reminded us of the importance of protecting biodiversity. I would recommend this as a must-visit for anyone passionate about conservation and green innovation.
