The bracken fern that has gone through this process is finely chopped by machine and pounded by hand, and the restaurant explains that the bracken fern must be crushed well to mix with the broth, resulting in a chewier taste and better texture. In addition, the broth made from Jeju black pork bones is mixed with dried ingredients, minced garlic, and salt, and boiled until it is thoroughly cooked. It is then put in a pot and boiled again as soon as it is ordered.
