From the old restaurant to the new one, it is still hard to get a table, and it is difficult to get reservations at the sushi restaurant "Len". However, we made reservations for dinner from the middle of last year to the beginning of March this year!
I had tasted Chef Hao's craftsmanship at the old restaurant many years ago, and it was no less than a Michelin-rated sushi restaurant in Macau. This time, I feel that the quality has been improved to a higher level - the knife skills, vinegar rice, and seasoning have all been improved.
I have never been a fan of too much seasoning in sushi, but I have to admire Chef Hao’s insight into the combination of ingredients and flavors. The combination of perilla flowers, wasabi leaves, straw smoke, etc. may sound a bit staggering, but the taste is amazing. Everything is just right and comfortable. At the same time, Chef Hao also rarely uses various cooking methods to process ingredients, which can bring out the natural flavor of sushi.
