If you don’t know, Prince Edward Baiyang Street was originally a Hechang big stall in the late 1950s, with a signature milk tea; then it became a Hechang fast food restaurant. Huang’s father (Uncle Gao) has been running a catering business in Sham Shui Po for more than 65 years and has a good reputation. After retirement, the second generation of his children took over the "Hechang" signboard. Jack Huang, the second generation of Uncle Gao, said: My father, Uncle Gao, whose ancestral home is Chaozhou, has always loved tasting goose, especially the braised goose from his hometown. In view of this, we transformed the family business into a Chaoshan braised goose restaurant and developed the traditional braised goose from our hometown into an industry for the second generation.
The main dish is "Hechang Chaoshan Braised Goose", which promotes the traditional authentic dishes of his hometown Chaozhou. On June 26, the "Hechang Chaowei Restaurant" opened at Shop D-F, G/F, Keelung Building, 9 Pak Yang Street, Prince Edward.

Chaoshan marinated goose is always based on slow-cooked goose, which contains golden and thick soy sauce and up to twenty distinct layers of medicinal materials and spices. "Hechang Chaowei Restaurant" uses many parts of goose, the more special ones are goose lips, goose tongue, and goose liver. Especially, marinated goose liver is very skillful to make. Cooking for too long or too short time will also affect the taste of the liver. Hechang goose liver will also use Western slow cooking techniques to make all the ingredients braised by us more tender and delicate. The liver is tasty and melts in the mouth. The thick-cut beef noodle soup is cooked in a Western way, combined with traditional Teochew marinade, a fusion of Chinese and Western cuisines. Compared to other Teochew restaurants, handmade dishes are few and far between, the cooking steps are complicated, and most of the ingredients are not easy to find locally, so they are gradually disappearing in Hong Kong, including: braised eel, Teochew Buddha's hand bone, lost stuffed crab, traditional glutinous rice crispy chicken, etc. Handmade dishes are complicated to prepare and require reservation one day in advance.
