Chiang Mai is a travel destination chosen by many literary and fashionable young people and families. Tasting the local food, Northern Thai cuisine, is an important part of the trip.
Northern Thai cuisine is one of the four major Thai cuisines (Northern, Northeastern, Central, and Southern). It is centered in Chiang Mai and has a strong, spicy and sour flavor. It incorporates the influence of the food culture of neighboring countries such as Myanmar and Laos and has distinct regional characteristics.
✨ Flavor characteristics
😊Sour, spicy and rich: Northern Thai cuisine is based on fermented ingredients, chili peppers and spices. The sour taste mostly comes from lemon juice or fermented meat products, while the spiciness comes from seasonings such as green pepper sauce and red onions. The overall taste is richer than that of central and southern Thai cuisine.
🤞Unique ingredients: pork, freshwater fish, glutinous rice and local fruits and vegetables, such as small green eggplant, green papaya, etc. Fried pork skin and fermented sour meat (Naem) are the signature ingredients.
✌Rich sauces: Green pepper sauce (Naam phrik noom), tomato pork sauce and other dipping sauces are indispensable supporting roles on the table when paired with glutinous rice or fried food.

Of course, Chiang Mai has many delicious little shops. We walked into any of them on the street and they all felt like a small family kitchen. It was fun to discover delicious food randomly.
😊My favorite dishes, must order at every meal:
🐱🐉Fried pork skin with green pepper sauce
The pork skin is fried until crispy and delicious, and is eaten with green pepper sauce (made from roasted peppers, garlic, eggplant and fish sauce), which is appetizing and relieves greasiness.
✔ For raw papaya salad, choose Laotian or Burmese style, which is more sour and spicy. You will remember it after eating it. If you choose the local style, it may be sweeter.
🎂The local glutinous rice can be rolled into a small rice ball with your hands. It is delicious with any dish on the table~
