I stayed at Baishu Guesthouse near Zengcuo'an, and traveled to all of my chosen scenic spots by subway. I recommend a three-day trip as it's just the right amount of time to get a good feel for the area. Day 1: Zhongshan Road, Cat Street, Shapowei, Huangcuo Sand Beach, and Zengcuo'an. Day 2: Yuanlin Botanical Garden, Xiamen University, South Putuo Temple, Baicheng Sand Beach, and Yanwu Bridge. Day 3: Gulangyu Island and Bashi Market (then back to Zhongshan Road for some last minute souvenir shopping!)
