I didn't know what Niboshi Ramen was, but it turned out to be ramen made with anchovy broth. Compared to other ramen, the noodles are somewhat curly and the anchovy broth reminds me of Korean knife-cut noodles. Honestly, I find Korean knife-cut noodles tastier. The anchovy broth is so rich it's almost fishy, and as always with authentic ramen, it's quite salty. I prefer Korean-style ramen over Japanese-style, so please consider that my review might be biased. I didn't have high expectations, and it was as expected. If you want to try a new ramen challenge, I recommend it. Before eating, the staff will ask if you're okay with spicy food by saying 'Spicy daijoubu desu ka?'
