Top 100 Udon Restaurants in Tokyo

"Taniya" located in Ningyocho/Suitengu has been selected as one of the top 100 Udon restaurants in East Japan by Tabelog since 2020 - it is currently my top 3 in Tokyo👍🏻 The owner, Tani, worked for several years at the famous restaurant "Morya" in Kagawa Prefecture, and his noodles are famous for their distinct chewiness. Depending on the weather, temperature and humidity of the day, different proportions of wheat and soft water are mixed and prepared every morning using the traditional foot-treading method. All noodles are freshly made and cut in the store, and even the soup is cooked freshly, which is very particular. When I first visit an udon restaurant, I will also choose the cold udon with cold tsuke dipping sauce (purely personal preference + I want to compare apples to apples). The noodles are indeed authentic Sanuki style, very chewy and elastic, with the right thickness and delicate flavor. All in all, they are very authentic. I heard that the tempura and natural hot soup stock without additives are also excellent, but I gave up because I wanted to try more udon restaurants and will leave it for next time.
