You can choose from two types of noodles at this restaurant: medium-thin noodles or flat rice. Both noodles are homemade using traditional methods (using wood ash) and have a unique crunchy texture. This time I ordered the Hon Soki Soba Dainijuushi. I chose the medium-thin noodles, which are recommended. The Okinawa soba served had a clear soup, and the aroma of bonito whet my appetite. When I took a sip of the soup, it was light, but had a strong umami and saltiness. It went well with the noodles, and as I continued eating, I enjoyed the Hon Soki served on a separate plate. The honsoki is not very strongly seasoned, but it is boiled softly and goes perfectly with the light soup. The juushii is also lightly seasoned and does not get in the way of the Okinawa soba, making it the perfect supporting role.
