Driving from Fukuoka to Kurokawa Onsen, passing through Oguni Town, I accidentally found a popular soba noodle restaurant #手打そば優心. Although it is a rural area, it has good business. If you don't make an appointment, you have to wait for half an hour. I wandered around nearby. While visiting, I unexpectedly visited the #Oguni Shrine with its towering ancient trees, and the #Keyaki Water Source along the Sakura River. The shop of Shouda Soba Youxin is very Zen-like, decorated with a row of wooden fences. Inside is an L-shaped workbench. Sitting in the tatami seating area, you can watch the noodle cooking process up close, from rolling the noodles, putting them in the pot, chilling them, adding ingredients, The chef's skillful plating is really brilliant and interesting. We ordered a tempura set and a beef rice bowl. The cold buckwheat noodles were served in a bamboo sieve and dipped in the sauce. They were smooth and slurpy. The tempura was fried crispy and delicious, and the beef was roasted tender and juicy. The soba cold noodles were a real treat. Another bowl was duck soba noodles in soup, which was lush and green, with a sweet soup and tender duck meat; I also ordered a portion of tamagoyaki in soup, which was a warm egg roll with rich soup, very delicious. Finally, the chef will scoop a spoonful of noodle cooking water and add it to the remaining dipping sauce container, which transforms it into a fragrant and rich soup stock. It tastes so delicious!
