Handmade soba noodles - Enju

A soba restaurant located a 10-minute walk from Kofu Station. The owner, who loves eating soba, opened the restaurant at age 66. The buckwheat flour is mainly from Aizu, rolled and ground with a stone mill. The binding flour is from Kumamoto, and other high-quality domestic ingredients are carefully selected. I heard it was a popular restaurant, so I went later in the day and there was a seat available, so I was seated right away. The seats filled up immediately after I entered the restaurant.
