This is Gaehangmyeon. Located at Dongincheon Station on Line 1, Gaehangro, and Chef Han Jin-gyu, who runs an Egyptian restaurant, revived an old hospital building that had been neglected and opened a new place. The noodles are made with Chinese fresh noodles made with Gwangsin Noodles, the first company in Korea to develop chewy noodles. Instead of making the noodles by machine, they knead the dough dozens of times to make the noodles, which gives them a chewier texture. First of all, it was really refreshing. It tasted exactly like honest Dongchimi + Makguksu. Dongchimi itself is a sour food, so I was worried that it would be too sour, but it was sweet enough to eat without any burden. It may seem like an unexpected combination, but it went really well with buckwheat noodles! Since it was buckwheat, the texture was chewier and tastier than regular noodles ^p^ And the kimchi we ate together... It wasn't just regular kimchi, it was pickled cabbage? I thought it was regular cabbage kimchi, but I was surprised because it was sweet ㅋㅋㅋㅋㅋㅋㅋㅋㅋㅋ It really tasted... You know those dumplings? They seemed to go perfectly with those! Or maybe boiled pork? It was kimchi that would taste good with meat. I thought everything was okay and delicious, but since it's a famous local restaurant (seriously, there are people who come from far away like me), I recommend calling in advance if you think it'll be crowded.
