As the home of the Scotch Egg and Knickerbocker Glory, Fortnum & Mason knows a thing or two about classic dishes. This summer, in our Food & Drink Studio, we'll be examining what makes something a classic, celebrating examples from around the world and asking ourselves to what extent these beloved staples should be allowed to evolve. As well as revisiting recipes and ingredients from the past, we'll be showcasing modern takes on classic dishes and looking ahead to the likely classics of the future.​ Joining us in June is self-declared  gay Indian food geek with tattoos , Gurdeep Loyal, who was born in Britain to Indian parents. In his first book Mother Tongue he explored his culinary upbringing that combined ‘authentic’ home-cooked Punjabi food, with ‘inauthentic’ Western curry-house favourites. In this dinner, Gurdeep will be exploring how classic dishes can - and should - be reimagined for modern day audiences. Inspired by his new book Flavour Heroes,that highlights how 15 pantry ingredients can transform your cooking, he'll be putting his twists on dishes we all know and love.
