Marco was an exceptional guide. He taught us about authentic Roman food, including norcinerias, famous for their pork products and traditional cured meats, or salumi—a tradition adopted from Norcia, Italy. He also introduced us to specialties sold in the Roman street market like pistachio paste, truffle seasoning, various types of olive oil and locally-flavored sauces. We indulged in croquettes, Roscioli’s pizza, Jewish-Roman artichokes and gelato served in a shop with novelty flavors. Additionally, we learned about the history of areas we visited. Marco was lively and engaging. He spoke audibly, clearly and with humor. The tour was very informative and helped us to choose where and what we ate in Rome more discernment.

Our first night in Rome was unforgettable! We went to a cooking class. Claudio, our instructor, was kind, patient, and made the entire experience so much fun. We made fresh pasta, spinach and cheese ravioli, fettuccine, and tiramisu—everything was absolutely delicious. It was the perfect mix of learning, laughter, and amazing food. A fantastic way to kick off our trip. Highly recommend this class to anyone visiting Rome. A must-do experience!

The variety of the food stops on the tour was super and fun - even if you are familiar with Italian cuisine. Fabi shared lots of contextual information extending beyond the food experience, too. The tour agency has ties with many of the vendors who were given a heads up when to expect us. One word of strategic advice --- there are plenty of opportunities to stuff yourself with really good food as the tour progresses. .... so save some appetite for the gellato stop which is last.
