Chongchong cake is one of the specialties of Xingyi. In 2018, Chongchong cake was also listed as an intangible cultural heritage of Qianxi.

In simple terms, it is water chestnut powder, similar to lotus root powder and potato powder. However, because water chestnuts are more functional in nourishing the stomach and spleen, the price is also higher. In addition, they are wild water chestnuts, so they are more expensive. As shown in Figure 3, the water chestnuts are really super small.

The price of Chongchong cake varies according to the number and quantity of glutinous rice balls. We ordered the largest number (8-color glutinous rice balls), which is also the largest portion. The three of us shared it and didn&rsquo;t eat enough haha, and the children ate a lot! !

🍲 Zouji Chicken Tangyuan, a local specialty of Buyi Ancient Village in Fenglin, Xingyi, is a local specialty. Its unique flavor, &quot;everyone else is sweet, but ours is salty and fresh,&quot; has become an unforgettable taste of Qianxinan in the memories of many diners.

Zouji Chicken Tangyuan&#39;s history dates back to the late Qing Dynasty. Founder Zou Yongfu fled famine in Xingyi. His daughter-in-law, Pan Tingfen, accidentally created the meat tangyuan using leftover stewed meat and glutinous rice dough. Later, she refined the recipe to use chicken as the main ingredient, adding sesame, peanut butter, and chopped green onions. From then on, the reputation of &quot;Zouji Chicken Tangyuan&quot; spread. Today, the Zouji Chicken Tangyuan has been passed down to the fifth-generation inheritor, Xu Minchang. In 2018, it was included in the fifth batch of Qianxinan Prefecture&#39;s Intangible Cultural Heritage List.

Zouji Chicken Tangyuan primarily uses local Anlong glutinous rice to ensure a fragrant, smooth, and tender crust. The filling is made from six or seven-pound free-range chickens and lean meat. The broth is made from pork shanks, hens, and lean meat.

Chongchong Cake boasts a rich history, dating back over a century. Its unique craftsmanship was inscribed on the fifth batch of Qianxinan Prefecture&#39;s Intangible Cultural Heritage List in 2018. Today, Zhao Manniang is run by Lu Yuya, the fifth-generation inheritor of the dish. While upholding tradition, she has also innovated and developed the flavors and varieties of Chongchong Cake.

The name &quot;Chongchong Cake&quot; derives from its unique preparation method:
* The first &quot;chong&quot; (chong) refers to placing a bamboo steamer containing rice cakes over the steam vent of a special copper kettle, where the high-temperature steam &quot;chong&quot; (chong) cooks the cakes.
* The second &quot;chong&quot; (chong) refers to quickly preparing water chestnut powder as the soup base. * Rinse the steamed rice cakes out of the steamer and place them in the prepared water chestnut flour paste.
