Wuzhou Chuji Kitchen is run by veteran chef Liang Zhuchu, and its dishes have won numerous awards locally. I strongly recommend the scallion oil fish (Figure 3). The grass carp from Xijiang River has no earthy smell. The whole fish is repeatedly cooked with hot oil, including the scales. The fish scales are crispy, the fish skin is crispy, and the fish meat is tender. After being drizzled with scallion oil, the aroma is overflowing. This dish is both time-consuming and tests the chef's traditional Cantonese cooking skills. It surprised me, a Shunde person who is very picky about eating fish, and I couldn't stop eating it. Guangxi "Buddha Jumps Over the Wall" (Figure 1) was created by Chef Liang, borrowing the meaning of the rich ingredients and attractive taste of the Fujian dish Buddha Jumps Over the Wall. The main ingredients are whole chicken, handmade fish balls, fresh shrimp, pork bones, Agaricus blazei, etc. Although the ingredients are rich, the soup is quite clear. Try it and see that it tastes refreshing, fresh and not greasy. The fish balls are especially delicious, which are different from the Chaoshan fish balls in Fujian, and the fish balls in Jiangsu, Zhejiang and Hubei. They are crispy, fresh and very distinctive.
