If you haven't been to Flair, you won't understand the dazzling beauty of Nanjing at night. Thanks to Mr. Chen, a wine connoisseur, I was able to enjoy rare vintages in the Ritz-Carlton's VIP room on the top floor. To match, the off-menu prepared by Chef Along of Diyuexuan was a delight to the palate. The main course for supper was Jiangtuan (a type of glutinous rice dumpling) that Chef Along had mailed from his beautiful hometown of Guizhou. His simple two-way presentation—braised Jiangtuan belly and spicy Jiangtuan noodles—demonstrated the comprehensive skills of one of China's hottest rising chefs. It made those of us who had just finished a fine dinner feel like we were about to have another stomach full. He also reminded us that the best part of Jiangtuan is the juicy, rich fish lips. This late-night snack is minimal yet refined, perfectly presented and thoughtfully presented. By the way, Guizhou Spicy Chicken is his signature dish, enhancing the flavor and minimizing the spiciness. They say no duck can swim out of Nanjing, and I suspect the chicken from Jinling will be in trouble this time.
