Why is it pronounced "xué" when it's clearly "xuan mian" (spinning noodles)? 😜 Besides shui pen mutton, Chengcheng also has a rather interesting snack: xuan (xué) noodles. They have the same pronunciation as Heyang's famous "xué" noodles, but the characters are different.
My guess is that they're made by rotating them on a griddle like a pancake, then cut into strips and tossed with cooking oil and other sauces before eating, sprinkled with chopped green onions.
The texture is firmer than noodles, because they're just shredded pancakes! [Laughs]
