It's a paradise-like place. You should stay for two more nights. The room with curved view is beautiful without leaving the room. You can go downhill to Hubei for a walk. There are several good shops in the hillside town. I like this kind of secluded life.

If you don't want to stay in Interlaken, I would highly recommend Spiez and Thun. Thun is more prosperous than Spiez, and Spiez is quieter and smaller, but there are few dining options and it closes very early.
