The castle is lovely and well maintained. The reception staff were friendly and helpful. We didn’t use the spa facilities so can’t comment on that but seemed nice. Our room was beautiful and welcoming. The big miss was dinner at the Douglas Hyde restaurant. The food was inventive and creative but not particularly flavourful and portions were on the small size. Our big complaint was the service - or rather the lack thereof. When initially seated we put in our drink orders for a glass of wine each. I asked to keep the wine menu because we wanted to get a second glass of wine during our dinner. We were told we could not keep the wine menu at the table because this is a fine dining establishment. Not a big problem. We understood they want the tables to look a certain way however we never had an opportunity to order a second glass of wine because the staff never came back! Over the two hours we were never asked if we wanted another glass of glass of wine. The food was brought by the kitchen staff so we didn’t ask them. We did get our water topped up once during the two hours near the end of our two hours there at which time we decided that we were not going to bother with another glass of wine right before desserts. in fact, we almost walked away from the desserts because we were so tired of waiting for service and thought the desserts would take a very long time as well ( they didn’t ). It’s possible the staff were overworked, but it didn’t appear to be very busy. There were two servers on from what we could tell and maybe five or six tables between them so we were very confused as to why everything took so long and we didn’t get water topped up or have an opportunity to order a second glass of wine. The food was also very slow coming out of the kitchen. While we understand this is a fine dining restaurant so there may be waiting time ,it would’ve been lovely to sit with a glass of wine rather than just sitting around waiting for our food. Our experience the next morning in the same restaurant for breakfast was a completely different experience . The servers were attentive and checked in on us frequently and the food was good. One other thing to note is that the website for the castle provides you the opportunity to book a distillery tour, which we did book. We assumed, incorrectly, that the distillery shed was located on the castle grounds, but in fact, it was 15 minutes away by car. If we had known that we wouldn’t have bothered to book it because we didn’t want to drink and drive. There is apparently an option to take a taxi to the distillery and back, however we were not confident that we would be able to get the taxi when we wanted it and would have to wait so we asked if we could cancel the distillery. Reception staff were gracious and took care of it for us. So in the end, no complaints on the distillery tour however it might be useful to be clear that the distillery is a 15 minute drive away and not on the castle
